  1. Prepare 8 cup water
  2. Make ready 2 bay leaf
  3. Get 1 inch cinnamon stick
  4. Get 1/2 tsp cloves
  5. Make ready 1/2 tsp black pepper powder
  6. Take 2 tsp oil
  7. Prepare 1 tsp salt
  8. Make ready 1 1/2 cup basmati rice, soaked for 20 minutes

  10. Make ready 2 tbsp oil
  11. Make ready 1 tbsp ghee
  12. Get 1 bay leaf
  13. Get 2 inch cinnamon stick
  14. Take 1/2 tsp cloves
  15. Prepare 1 tsp shah jeera(cumin seeds)
  16. Get 4 cardamom
  17. Make ready 1 star anise
  18. Get 1 onion chopped sliced
  19. Prepare 1 tsp ginger-garlic paste
  20. Get 2 cups mixed vegetables (carrot, gobi,potato, beans, )chopped
  21. Prepare 1 cup curd
  22. Take 1/2 tsp turmeric powder
  23. Prepare 2 tsp biryani masala powder
  24. Take 1 tsp salt
  25. Make ready 1 cup water
  26. Prepare Other ingredients
  27. Prepare 1/4 cup mint leaves
  28. Prepare 1/4 cup coriander chopped
  29. Get 1 tbsp ghee
  30. Make ready 1/2 cup fried onions
  31. Get pinch biryani masala powder

The Biryani cooked with vegetables in Hyderabadi style is known as ‘Hyderabadi Veg Biryani’. This hyderabadi veg biryani or hyderabadi vegetable biryani recipe is a slowly cooking method where the preferred vegetables are stir fried and mixed with all the spices to make a sabzi masala, mixed. Veg Biryani is a delicious and aromatic preparation of Rice, Vegetables and spices cooked in a traditional Hyderabadi Dum Biryani style. Veg biryani recipe – For making vegetable dum biryani, basmati rice and vegetable gravy are partially cooked separately first.

Instructions to make Veg dum Biryani:
  1. Firstly, in a large vessel boil 8 cups water along with 2 bay leaf, 1 inch cinnamon stick, ½ tsp cloves, 1 star anise, ½ tsp pepper, 2 tsp oil and 1 tsp salt.
  2. Now add 1½ basmati rice, soaked for 20 minutes. stir well.
  3. Boil for 10 minutes or till the rice is almost cooked. (do not cook the rice completely, as it will get cooked in dum while preparing biryani)
  4. Drain off the water and rinse with cold water to stop cooking process. keep aside.
  5. For gravy:-in a large kadai heat 2 tbsp oil and 1 tbsp ghee.
  6. Add 1 bay leaf, 2 inch cinnamon stick, ½ tsp cloves, 1 star anise, 4 cardamom, 1 tsp shah jeera. saute till the spices turn aromat.
  7. Add in 1 finely chopped onions and saute well.also add 1 tsp ginger garlic paste and saute.
  8. Furthermore add 2 cups mixed vegetables (carrot, gobi, peas, potato, beans) and saute for 2 minutes.
  9. Add 1 cup curd, 1 tsp chilli powder, ½ tsp turmeric, 2 tsp biryani masala powder, 1 tsp salt and 2 tsp coriander-mint paste. add 1 cup water. cover and cook for 15 minutes.cook till the vegetables are almost cooked.
  10. Firstly, in a thick bottomed deep vessel spread in a layer of prepared biryani gravy.layer with cooked rice.spread few chopped mint, coriander, fried onions and saffron water.
  11. Top with a tbsp of ghee, mint, coriander for more flavours.close the lid .keeping the flame on low, cook for 15 minutes or till the rice and vegetables get completely cooked . biryani is ready and serve with raita.

Then both are assembled in the layers with the topping of nuts, fried onions. Spiced vegetables cooked with basmati, saffron, butter and whole spices. A dum phukt biryani or dum cooked biryani should be cooked with loads of patience. The whole process of putting the veg biryani under dum should be done in very low flame.
